Terra Di Rovo Organic Extra Virgin Olive Oil Blend comes from 250 centenarian olive trees of the Moraiolo and Leccino varieties. The first is characterized by an intense aroma of artichoke and green beans, while the second has light notes of green almonds and meadow grass.
The organic olive grove is pruned every year by hand, while the land is left grassy to allow the biodiversity of this land to prosper undisturbed.
The EVOO comes exclusively from olives harvested between October and November at the beginning of the screening process, in order to keep the level of polyphenols, antioxidants and free radicals as high as possible.
Once harvested by hand, the olives are taken to the oil mill within a few hours and cold-pressed.
After the pressing process, the extra virgin olive oil is lightly filtered, immediately bottled and kept to rest in the dark and at a controlled temperature.
