Terra Di Rovo Caberbet Sauvignon is a 100% natural wine produced from an organic single-variety of grapes without ageing in wooden barrique. During the phases of processing and bottling, we do not add any kind of artificial yeast or sulphites in order to leave the wine free to express itself at better.

At Terra di Rovo we collect the grapes exclusively by hand, deposit them in small boxes and transport them to the cellar within a very short time from the harvest, to preserve the freshness of each individual bunch. We immediately process the grapes with the press and leave them to ferment for a few days.

Fermentation in steel containers takes place in a totally natural way, so as not to change the original aroma and body of the wine in any way. Once the fermentation process is complete, we pour the wine to separate it from the coarse lees. The wine stabilizes with the cold winter, also from the tartaric point of view.

In full respect of the ancient traditions, we carry out every phase of processing in the vineyard and in the cellar during the waning moon days. Once ready, we bottle our natural unfiltered wine and let it refine in bottle for at least 2 years before sharing it.

ORGANOLEPTIC CHARACTERISTICS:

Characterized by a very intense purple pigmentation, with delicate purple reflections. This fruit-forward pure Cabernet Sauvignon has aromas of dark berries, a touch of peppery spice and hints of peppermint. The palate is laced with flavours of wild blackberry, mint and hay. Full and warm on the palate, with high acidity and a low alcohol value. Persistent and balanced, a wine with great longevity.

GASTRONOMIC COMBINATIONS:

It elegantly matches all dishes with strong and intense flavours. Best to enjoy Terra di Rovo Cabernet Sauvignon with duck, wild boar, grilled meats and hard cheeses.  Ideal temperature 16-18 C.

PRODUCTION AND CLIMATE AREA:

Vineyard hidden in an Umbrian valley, 350 meters above sea level. The area is characterized by hot summers and cold winters.

CHARACTERISTICS OF THE VINEYARD:

Highly mineral soil of Pliocene origin, rich in marine fossils with veins of clay. The vineyard was planted in 2014 respecting the surrounding environment and without removing any of the surrounding trees and vegetation. Set with a mono lateral Guyot system and an inter-row space of 3 meters. The flora surrounding the vineyard has remained unchanged to ensure that the micro-ecosystem of native plants and flowers help the vineyard grow and protect it from attacks by pests and weeds.

HARVEST:

Generally done at the beginning of October it can vary by a few weeks depending on the season. The grapes are handpicked and the harvest is done exclusively by local winemakers who take care of the vines throughout the year. In the harvest phase, a selection of the best grapes is made. Once the grapes are harvested, they are immediately placed in small boxes to avoid the crushing the grapes and taken to the cellar ready to be drifted and crushed.
